O’Lentil One Pot Vegetables

Amount Two Persons

Ingredients  

  • 150g O’Lentil”Slice & Dice” cut into large dice or rounds
  • 100g Selection of prepared vegetables cut as for thin stir fry (carrots, beans, mange tout, leeks, asparagus, spinach, watercress etc)
  • 500g Clear vegetable stock (see recipe) or use a quality veg stock cube
  • Chopped chives

Method

Bring the vegetable stock to the boil

In order of cooking time place the vegetables into the pot e.g. carrots, asparagus, leeks, beans, spinach etc DO NOT OVERCOOK. At the last minute drop in the O’Lentil and bring to the boil cook for 3 minutes

To Serve

Serve in a large bowl with chopped chives

Points to Watch

Make sure that the vegetables are cut attractively and not too large.

Keep the stock clear
